I'd say almost anything done by Ganix. Kare Kano, FLCL, Evangelion. Just to name some. They have a fun style that goes everywere and back again.

I've seen quite a bit and I recommend Full Metal Panic, Fruits Basket, Crest of the Stars, Trigun, Rurouni Kenshin, Vampire Hunter D, Inuyasha, Escaflowne (Jap. Version), Gundam Seed, and Gasaraki ( a little hard to get into, but good none the less).
