Hello Everyone. I found your website quite accidentally while researching the best recipes for Jello Popcorn Balls because there was a thread on it last year (I'll put the recipe on the bottom of this note because I didn't see it anywhere in the recipe archives) and I started reading other notes and I just fell in love with everyone in their threads. I felt like I was right back home instead of where I am right now, an American Immigrant in cold, wet, rainy Scotland!It is through the fault of the Internet that I am here now as I met my sweet Scottish husband on-line about three years ago, but thank heavens for sights like these. I felt like the world as I knew it had started to disappear under the gloomy industrial buildings, drugs, drinking and dirtiness of this town. I'm sure there are lovely parts of Scotland, but I don't live in one of them! My husband and I are planning on moving back home sometime next year, but the one and a half years I have spent here already have taken their toll on me, and now I live a life of anti-depressants and being afraid to leave the house.
I have enjoyed reading stories of wonderful family christmas traditions that I miss so much back home. I loved the down to earth recipes, the wonderful humor, the sweet friendship that you all share and I know that the american spirit, no matter how far away it may seem, is still alive and well.
If there is anyone else out there who needs someone to talk to or just wants to chat I would certainly welcome it! I can't wait to read more of your stories and letters.
As promised, here's the Jello Popcorn Ball Recipe...Enjoy!
1 small package jello, any flavor (except sugar free) 1 cup sugar 1 cup corn syrup 9 cups popped popcorn
Put the popcorn in a large bowl or spread on a cookie sheet.
combine jello, sugar and syrup in a small saucepan. Stir well. Bring to a boil over low heat. As soon as it starts to boil, pour the syrup over the popcorn and stir well to coat. Butter hands and shape the mixture into balls (be careful because it is HOT!) Let balls cool and wrap in plastic wrap. Enjoy!
