SOUTHWESTERN EGGS BENEDICT

English muffins
Miracle Whip salad dressing
Eggs
Shredded Cheddar cheese
Salsa

Split muffins and warm in toaster. While muffins are warming, poach eggs until done as desired. Lightly butter or margarine muffins and spread each with Miracle Whip. Place muffins side by side on a pre-warmed plate and place salsa between and around each muffin. Place one egg on each muffin and then sprinkle with cheddar cheese. Place in warm oven (250 degrees F) until cheese is melted. Serve immediately with extra salsa available on the side.
