Amish baking recipes for you to use

I got these recipes from a friend of mine whose husband is a bi-vocational pastor and they have 10 children, so I know that they are penny pinching recipes. Thought all you thrifty folks out there might enjoy them. They are a staple at our house. I hope some of you will enjoy these as well!

Amish Pancake Mix 10 c. all purpose flour 2 1/2 c. instant dry milk 1/2 c. sugar 1/4 c. baking powder 2 t. salt

Mix and store in a ice cream bucket. To make: 1 1/2 c. pancake mix 1 beaten egg 1 c. water 3 T. oil

Amish Baking Mix (similar to Bisquick) 8 c. all purpose flour 1/4 c. baking powder (I add a bit more to make them fluffier) 1 T. salt 2 c. shortening

Combine dry ingredients. Cut in shortening. Store in ice cream bucket. Fluff with a fork before measuring.

To make: 3 c. baking mix 3/4 c. water Mix. Roll. Cut. Bake 10 min. 450 degrees.

My recipe is just like the Amish one above only it has 10 cups of flour. They would be the same if you adjusted the other ingredient amounts. I do have one for cornbread......It is for 2 batches of cornbread or 48 muffins. It has 2 2/3 cups cornmeal, 2 cups all purpose flour, 2 to 4 TBS sugar(to taste), 1 1/2 tsp salt, and 2 TBS baking powder. To make the cornbread you take out 2 1/2 cups of this and add 2 eggs, 1 cup milk and 1/2 a stick of margarine or butter melted. Bake at 400 degrees. Will make an 8 inch square pan or 12 muffins. It doesn't make much so I would double the mix recipe to have more batches unless you only need a little bit each time.

I will try and do that link thing for you that I think Karen was teaching how, so if it don't work bear with me and Karen save me! This is my first time posting so I don't know what I'm doing! To make your pancakes a little healthier replace 1 cup of the above recipe with a cup of oats, and another cup with whole wheat flour. Gives them a grainy taste that is very good. You might need to add a little more liquid...
