I have some cans of black eyed peas to use & I've never used them before....Can anybody give me some yummy ideas of what to do with them??THANKS

To cooked black eyed peas add rotel, smoked sausage, onions, garlic, simmer it all together. Serve over rice. Yum

Heather, I have never used blackeyed peas from a can but we have eaten them (cooked from dry) forever. To the peas, add chopped onion and a ham bone (cheapest) or cut up pieces of ham, and (assuming it isn't seasoned yet) season with a bay leaf, salt, pepper and a wee bit of thyme and basil. Simmer LOW and I think the flavors will blend nicely. Since the peas are cooked already and you don't want them to turn to mush, try this way: if you have a crock pot, try heating peas to simmer on stove, then transfer to the pot and continue to heat on LOW to allow flavors to blend. If you don't eat pork (or meat at all) just leave out and season as above, maybe adding a bit of vegetable boullion to the rest of the seasonings. Another recipe: hmmmm, this could just go on forever...) this one for "Hoppin' John" -- add cooked rice (about 1 part rice to 2 parts blackeyed peas)to the peas and season and simmer as above. Sometimes we add ketchup to our own helping. (For the record: if you cook the peas from dry, add uncooked rice in the last 30 minutes or so of cooking time, and just cook them together [make sure there's plenty of water in the pot]) Oh, and blackeyed peas just GOTTA have cornbread on the side! (: (Hope you'll be hooked. If you're not nuts about canned b.e.peas, try a bag of dry ones, may taste quite a bit different.) Good stuff!

I like just plain black eye peas, cooked with a little bacon or bacon grease, salt and pepper. Served with corn bread.

They make a wonderful salad. Add chopped tomatoes, celery, chopped onions, and chopped fresh hot peppers to your taste. Yummy !
