Super Bowl Recipes - Today is Cold Finger Foods

Today's Super Bowl Recipes are cold finger foods. Below are some of my favorites. Please add yours.

MOZZARELLA TOMATOE BASIL APPETIZER

Mozzarella cheese slices
Tomatoe slices
1 cup Olive Oil
1/4 cup Vinegar (balsamic is the best)
salt and pepper to taste
1 clove garlic (finely minced)
2 tsp. Dried Basil or 1 tablespoon Fresh

Combine all and marinade in frig. for 1 hour. Arrange cheese and tomatoes slices on a plater and pour some the marinade over. Serve with crispy bread slices.


DEVILED HAM BALL

8 oz. cream cheese
1 can deviled ham
1 tsp. paprika
salt and pepper to taste
1 cup chopped nuts
Combine all except nuts. Form into a ball and roll in nuts and refrigerate. Serve with crackers


ARMCHAIR QUARTERBACK CRUNCH

3 qt Popped popcorn
2 cups Mini pretzels
1/3 cups Pumpkin seeds (optional)
1/4 cup Regular or light margarine
2 tablespoon Grated Parmesan cheese
1 teaspoon Mexican seasoning

Place popped popcorn, pretzels and pepitas in large bowl. Melt margarine in small pan. Add Parmesan and Mexican seasoning. Drizzle over pop corn and toss lightly. Makes about 3 1/2 quarts.


BOURSIN CHEESEBALL

2 tblespoons Butter -- softened
1 lg. Garlic Clove -- finely minced
1/2 teaspoon Dried Dill Weed
1/4 teaspoon Dried Thyme
2 tablespoons Dried Parsley
1 tablespoon Dried Chives
8 oz. Cream Cheese -- softened
3 tablespoons Milk

Combine all and roll into a ball or pack into a serving dish. Refrigerate at least 12 hours. Serve with crackers.


EASY MARINATED MIXED OLIVES

1/2 c. olive oil
1/2 c. vegetable oil
1/4 c. vinegar
2 cloves garlic, chopped
2 tsp. chives
1/2 tsp. dill weed
1/2 tsp. thyme
1/2 tsp. basil
1/2 tsp. oregano

Combine all the above well. Add a variety of olives and refrigerate overnight or several days. Will keep for a week.
