Chicken Sausage

Has anybody here ever made or eat chicken sausage? If so, was it good? I've been thinking about going to all the poultry swaps this coming summer and buy up a bunch of roosters to make chicken sausage out of, if it is any good. Usually around here at the auctions you can buy roosters for as little as .50 cents each.

Answers

You can get turkey sausage at the store (and make it yourself of cause) so why not chicken. Let us know how it turns out, I'd be interested.

I've made rabbit sausage before, and it was delicious. I think chicken would be just as yummy.

I never made it either but have made Rabbit sausage and the meat taste so similar it should be great. I have three turkeys and have been thinking of making it out of them. Good luck with it, ours is very good if anything it may be a little dry, but would be much better for you than pork.

You can make sausage out of lamost any meat. We've made it with smoked trout and it turned out pretty good. Try the chickens and let us know how it turns out. Good luck. Tomas in B.C.

r. h. in okla. Yes, chicken works for sausage. Use a bit of salt pork, a little bread (keeps them from drying out in cooking) and the seasonings that you like to taste in stuffing. Fry a bit to see how it tastes, then stuff in pork casings. Freezes well.
