3/4 cup scalded milk 1/3 cup granulated sugar 1/4 teaspoon salt 1 (.25 ounce) envelope active dry yeast 1/4 cup warm water 4 cups sifted all-purpose flour 1 teaspoon freshly grated nutmeg(optional) 1/3 cup butter or margarine 2 eggs, beaten

oil for deep frying 2 cups confectioners' sugar 6 tablespoons milk

Directions 1 In a medium bowl, stir together the scalded milk, sugar, and salt. Set aside to cool until tepid. If using nutmeg, stir it into the flour, and add 2 cups of the mixture to the milk, and beat until well blended. 2 In a small bowl, dissolve the yeast in warm water. Stir into the milk and flour mixture, then mix in the butter and eggs. Mix in the remaining flour 1/2 cup at a time. When dough is firm enough, turn it out onto a floured surface, and knead for 3 to 4 minutes. Place into an oiled bowl, cover and allow dough to rise until doubled in bulk. This should take 30 to 45 minutes. 3 On a lightly floured surface, roll the dough out to 1/2 inch in thickness. Cut into circles using a donut cutter, or round cutter. Set aside to rise for 30 to 40 minutes, or until light. 4 Heat one inch of oil in a deep heavy frying pan to 375 degrees F (190 degreesC). Fry donuts a few at a time. Cook on each side until golden brown, then remove to drain on paper towels. Glaze while warm, or just sprinkle with sugar. 5 To make the glaze, stir together the confectioners' sugar and 6 tablespoons milk until smooth. Dip warm donuts into glaze, and set aside to cool.

I am sorry for the formatting on the recipe. I didn't realize that hitting enter didn't send the next ingredient or step down to the next line.

All right, here's a dumb question: How does one scald milk?

-- gita (gita@directcon.net), January 21, 2002.

Gita, to scald milk just means to heat it until a think skin forms on the surface....this is a step I always omit, it's to help preserve the finished product from spoilage, but nothing ever lasts around here long enough to worry about it, and well I just never worry about stuff like that, we leave our butter out all the time too.

Rose,it formatted just fine in our E-mail. That's where we copied it from. Don't know why it didn't go line to line here. Brenda The Farm

Very easiest kind; make a hole in the middle of canned biscuits and deep fat fry. Glaze or roll in cinnamon and sugar. This is the recipe for Crispy Creme donuts on the famous recipes site.

Here's another fried donut recipe:

1 pkg yeast

1/4 C. warm water

3/4 c. lukewarm milk

1/4 c. sugar

1 egg

1 tsp. salt

1/4 c. shortening

3 1/2 to 3 3/4 c. flour

Dissolve yeast in warm water, Stir in milk, sugar, salt, egg, shortening and 2 c. of the flour. Beat until smooth then add remaining flour. Knead 5 minutes cover and let it rise 1 1/2 hours.

Punch down dough and let it rise 30 minutes.

Roll out 3/8 inch thick and cut. Let the donuts and donut holes rise 30 to 45 minutes uncovered to form a crust.

Deep fry til golden, glaze or sprinkle with sugar.

Here's another fried donut recipe that makes Cake donuts:

3 1/3 c. flour

1 c. sugar

3 tsp baking powder

1/2 tsp salt

1/2 tsp cinnamon

1/4 tsp nutmeg

2 TBS shortening

2 eggs

1/4 to 3/4 c. milk

Measure 1 1/2 c. flour-add remaining ingredients. Beat on low 1/2 minute. Blend on medium for 2 minutes. Stir in rest of flour. Roll dough 3/8 of an inch thick. Cut out the donuts and deep fry til golden. I like to sprinkle these with cinnamon sugar or powdered sugar, but they are great without any sugar at all! Happy Baking!!

I'd like to make some BAKED donuts. The fried ones do not agree with my stomach. Do you have any recipes? Thank you.

Trudy, maybe you might want to post your request as a separate question. It might get lost in this thread. I hope someone has a recipe too as I'd like to try baking them too.
