Hi folks, I am scrambling to get lunches together for my dd who, unfortunately, has had to go back to school from homeschooling. I was wondering if anyone has had any success making potato chips, and how you went about it?

Hi again Sandie. I remember when my brother and I where young we made potato chips. We had one of those vegetable slicers that sliced the potatoes really thin and we just cooked them in hot grease like french fries. They where pretty good. I remember that since they where sliced so thin they cooked very fast so they have to be watched closely.Irene

370 deg.f. Peanut oil (almost smoking hot) and super thin potato slices you want to cook all the water out of the potatoes or they will turn soggy. If you then bake in a 350 deg. oven for a few minutes, they seem to stay crispy longer.

Be sure to use baking potatoes as mashers become soggy.

I make potato chips all the time. After slicing very thin (I, too have one of the vegetable slicers I bought for about $10 at a kitchen store), I soak the chips in cold water until ready to fry. Pat dry and (here's the big secret) fry twice. Fry a batch until they're almost done; remove and drain; fry another batch. When all the batches are half-done, start over and fry them again. They're really good and really don't take a lot of time. My family prefers them over store-bought.Wishing you enough.

I use a potatoe peeler to make the slices super thin. I peel them directly into the hot oil.I never tried keeping any in a bag I always eat them all as soon as I cook them.
