Cream of Broccoli Soupgreenspun.com : LUSENET : Countryside : One Thread |
I made some delicious Cream of Broccoli soup and thought I'd post the recipe here for anyone interested. I modified a potato soup recipe that I got from www.recipenotes.comIt was so nice to have a hot steaming pot of soup last night since the temperatures turned off a bit chilly.
2 slices bacon, cut into small pieces. 1 onion 1 stalk celery 1 bottle beer (homebrew's the be best!) 3 cups cooked broccoli
3 Tablespoons butter 1/4 cup flour 2 cans milk
Garlic Salt Pepper Tarragon Worcestershire Sauce Parmesan Cheese
Directions: In a large saucepan or stock pot Fry bacon, onion and celery 'til bacon's done and veggies are tender. Do NOT drain off drippings. Add 1 bottle of beer and heat through. Add the cooked broccoli and heat that through as well.
In a separate pan melt the butter, then add the flour and cook for about 1 minute. Add the milk and cook 'til thickened. While milk mixture is cooking, add spices to taste.
Add the milk mixture to the broccoli mixture and stir well. Taste and adjust seasonings.
I hope someone enjoys this recipe as much as I did!

Hey Nancy the mercury dropped to 50 deg around here (Baltimore MD).Soup sounds great. I was thinkin of maybe breakin up a Chesapeake Bay Crab Cake in a batch. (cream of crab is a favorite)!

Hi Rick!Temperature was right at 30 when I got up this morning. Didn't quite frost where I am though.
I don't care for seafood myself, but the rest of my family loves it. I'd like to take a peek at your recipe too!
