I just canned some apple sauce today. I peeled cored and chopped the apples, cooked till tender in a little water. Sort of ran them through a food mill (I like chunky sauce so mainly just mashed the chopped pieces a little). Add sugar to taste, bring to boiling. Pack hot into hot jars leaving 1/2 inch headspace and hot water bath for 20 minutes.

Apple Jam:

Peel, core, and cut apples into chunks. Boil with lemon juice, 1/2 cup to 4 quarts of prepared apples. Add a cup of sugar for each quart of apples; return to boil. Reduce heat and cook until thick; about 30 minutes. Ladle into 1/2 or 3/4 pint jars, leaving 1/2 to 1/4 inch head space, process in boiling water bath 5 minutes. Remove from water bath and cool. Tastes like a very sweet, thick applesauce and is good on homemade biscuits. Also we have mixed some of the jam with brown-sugar syrup and a little cinnamon for a pancake or icecream topping.

One of the simplist things to do with an apple is to bake it. Wash it good and cut out the core without cutting the skin on the bottom. Fill with brown sugar, raisins, and a dab of butter (maple syrup is good too) Put in an oven proof dish and bake it while eating supper. Microwave is good too.

... baked apples - you can core right through, then plug the hole at the bottom with a dried date before adding the filling. Put a little butter on the bottom so any juice or filling that does get out won't stick to the pan too badly.

Mass produce - don't forget to use the peels and cores to make apple jelly - look up recipes with www.google.com, and use "apple jelly recipe" as the search phrase.

Good Lord! Apple pie! And the crust must be made with lard, not the insane chemicals or vegetable derivitives. If you need help in the process for rendering lard, let me know. If you need a recipe for making the crust, let me know. If you need a recipe for the pie itself, let Maggie know. I don't know why, but even with her mother hen guidance when I make them, hers are always better. On the other hand, when it comes to seafood, especially chowder, I reign supreme. Go figure! GL!

Use an apple/corer/peeler to prepare apples and dehydrate! Dried apples are wonderful snacks!

Does anyone have a recipe for apple butter that you bake in the oven for many hours. Our kitchen is being remodeled right now and I can't find my recipes anywhere. I have lots of apples but no recipe. I remember it had lots of sugar, spices and vinegar in it and you bake it. I just don't know the proportions. It was the best apple butter- my husband's favorite. TIA for any help you can give.

I dehydrate apples every year. We love to cook them at a later time for applesauce or apple butter but my favorite is an old fashioned apple-stack cake. If you'd like the recipe, let me know. My daughter especially likes dehydrated apple rings that have been dipped in gelatin powder. I slice the apples into rings and dip one side into a bowl of Jello before placing them on my dehydrator trays. They are very colorful and tangy.

For an easy, wonderful snack, pour caramel ice cream topping over a block of cream cheese and serve as a spread with fresh apple slices. It's so GOOD!
