Cheese Ball recipes.

(I didn't see a cooking/kitchen category other than kitchen science--so that's what I labelled this)

We are getting ready for an open house and I am looking for new cheese ball recipes. I have used the ones from the Joy of Cooking cookbook. I am especially interested in ones with interesting flavors and from scratch. I like almost all cheeses (haven't found a goat cheese I like, but I think its because none of you goat folks live nearby to introduce me to great cheeses from goat's milk).

Anyone want to share?

I've not made cheese balls, Anne, but there is a company (Merkt's) that makes various cheese spreads, and I think one of their best flavors is Swiss and Almonds. Another cheese I enjoy is Dill Havarti -- I think that would make an interesting spread.

I have a Fannie Farmer cookbook. It's got a recipe for Cheese Ball with cream cheese, blue cheese, and sharp Cheddar, garlic, tabasco, almonds, and parsley. Post again if you want details.

It also has something called Liptauer Cheese. This is what it says about it: "Very popular on the American cocktail scene. Liptauer is really an adaptation of a Hungarian recipe. The original uses a native, soft sheep's cheese called Lipto. Pile in a mound and serve surrounded with crackers."

That has cream cheese, sour cream, butter, capers anchovies, shallots or scallions, paprika, and caraway seed. Again, let me know if you want me to type out the recipe.

How about Salmon Ball -- salmon, cream cheese, lemon juice, horseradish, and onion, coated in parsley & chopped pecans. That's in the same book.
