Go to www.google.com and search. Try "Italian sausage recipe" (which turns up some, but also a lot of just how to cook the sausage once you've got it); and also "make Italian sausage". A local magazine here treated the entire subject of preserved meat sausages (pepperoni, csabai, salami, etc.) - from memory, it took them four issues, and about three or four A4 pages each issue.
