Just got done checking the archives for salsa recipes and couldn't find what I wanted. I am looking for a salsa recipe that contains bell peppers and is mild not hot (I'm from Minnesota, what do you expect?) Hope someone can help. Thank-you.

try this- 4 cups chopped, peeled tomatoes. 3 tablespoons chopped cilantro. 1 cup onion, finely diced. 2 tablespoons tomato paste. 1/4 cup bell peppers, diced. 1 teaspoon red wine vinegar. 1 tablespoon lemon juice. 4 cloves garlic, minced. 2 dashes Tabasco. pinch cayenne.Mix all ingredients and chill. ***I often leave out the tomato paste. This is then more like a pico de gallo, really excellent.

Hello Nancy,I use as many fresh tomatos as I think I will need for the amount of salsa I want to make. These I coursly chop, I add one to two chopped green peppers or if I can get some red or yellow pepers on sale add them chopped also, I finly chop a bunch of green onions and a small red onion. I add a good amount of chopped cilantro and for just a easy zing one small hot pepper finly chopped, this adds flavor without it being hot. I mix this well then add fresh cracked pepper and sea salt....stir well again and let sit for the flavors to mary.
My family loves this even the small children.

Thanks, will try these this afternoon. Has anyone ever frozen salsa?

Nancy, if you like the flavor of Jalapeno peppers but not the heat, try raising some TAM Mild Jalapenos. I know this isn't what you asked for but it's what I have to offer. They really are flavorful but don't scald your tongue.
