I have some left over ham in the freezer I can't think of any way to use it does anyone have a recipe I am brain dead with this one. ronda

A couple of thoughts: Cut ham into chunks, add a jar of green beans, some small potatoes, and bake covered for about 45 minutes. ( My favorite quick meal.) or Grind, add some relish and mayonnaise for homemade ham salad. Cut into slices and fry with some potatoes and onions. Make ham, potato, and broccoli soup. Whenever I have a big ham leftover, I cut it into pieces and put into ziplock bags so I can use it for various things without thawing out the whole ham. Also good diced up in omlettes. Hope this helps

This is a childhood favorite and I still love it today.

Ham Chowder

1 cup celery 1 cup onion 2 cups ham salt 1/2 tsp thyme 1/2 tsp tabasco 2 cups diced potatos 2 cups water 1 can tomatos bay leaf

Cook until tender. Add 2 cups milk when ready to eat. Heat.

Cut ham into chunks, mix in with beaten eggs for scrambled eggs and ham. Then when you rmove them from the pan sprinkle on cheese and it makes an excellant breakfast. Just add toast and juice on the side.

leftover ham.... yum yum yum!

How about.. breakfast quiche! Just whip up a few eggs with milk, add some cheese and that ham, cubed, and pour it over a pile of bread cubes. You want it a little sloppy, but not like soup. You can bake it right away, or allow it to set in the fridge overnight. I like to set it into the (350) oven as I go out to do chores in the AM, and when I come back in an hour later, the breakfast is served!

Another favorite, is to layer thin sliced potatoes and leftover ham in a baking dish. Cover with a medium white sauce and bake for an hour (or till done) at 350.

Also, how about good cold ham salad served on lettuce with tomato wedges and round crackers out under a shade tree? A tall glass of iced tea would go nicely with that...

Or perhaps you are in the mood for some reeeeeeaaaaaall southern cookin? Take that there ham and put it with some pinto beans and simmer on low for a few hours (other dried beans do nicely too, but you have to soak them overnight first and then cook them longer.) mmmm MM! Or perhaps you would prefer to put it into the mustard greens or the collards? I myself have a preference for turnip greens with bacon or ham. A good hot corn muffin on the side would just add that finishing touch.

Throw some on the pit when you are smoking some meat, freeze in ziplocks to add to beans this winter. Add sliced potatoes and onions in layers and cover with cheese sauce, salt and pepper, ham and scalloped potatoes. Grind up with mayoniase and chop in some celery and eggs for ham salad sandwiches. It may sound weird....but I like to run it through the meat grinder...then run the same amount of celery through it and mix together for a great sandwich spread.

We don't have much time to cook and I hate washing dishes so we do one of two things with it.

Mix it in with Walmart's extra creamy mac n' cheese, add onions and bell peppers to make a casserole.

Or, put it in with scalloped or augraten potatoes and make a casserole out of it.

Or Betty Crockers bacon Suddenly salad is nice on a really hot day.

I like to use leftover ham in Jambalaya!! Pretty good with a slice of hot, buttered homemade bread!

Use it for the meat in Fried Rice. "It's yummy!" I often fix left over rice this way for breakfast. If I don't have any left over meat, I just put in an extra duck egg.

My Mama always put leftover ham in homemade macaroni and cheese, topped it with buttered bread crumbs and baked it. Delicious!

Well...my favorite is to make a white sauce (look in your older cookbooks), add chunks of ham, chopped onions, and leftover chunks of baked or boiled potatoes. Yummmm...we call it ham casserole.

Here is a really yummy recipe that I tried recently. You can also make use of those left over mashed potatoes.

Ham'n'Cheese Mashed Potatoes

2 cups mashed potatoes 3/4 tsp. garlic salt 1 c. diced fully cooked ham 1 c. (4oz) shredded cheddar cheese 1/2 c. whipping cream, whipped

In a bowl, combine the potatoes and garlic salt. Spread into a greased 1-1/2 quart baking dish. Sprinkle with ham. Fold cheese into whipped cream; spoon over ham. Bake, uncovered, at 450 degrees for 15 minutes or until golden brown. Yields 4-6 servings.

My family really enjoyed this dish.

My family has always liked my casserole with our leftover ham. Here it is for you. ENJOY! 1-2 c. cubed ham, 1 can cream of celery soup,6 oz. milk of your choice, I use evaporated to make it richer. 3/4 c. of cubed cheese of your choice , or none at all. 16 oz. pasta of your choice, I use no- yolk wide noodles. Seasonings to fancy your pallate. Cook the pasta, drain and set aside. Mix all other ingredients and warm until cheese has softened. Blend mixture with the pasta. Place in a buttered casserole, sprinkle with flavored bread crumbs, dot with butter or margerine and bake 375 dgs for 30 min. You can really play with this recipe. Have fun!
