Hi everbody, I was wondering if anyone had any good casserole recipes. Anything that is to eat besides hamburger. My husband and I both work and I feel kind of guilty but I don't garden or raise any animals. We get kind of stuck in a rut and seem to eat the same stuff over and over. I read both Countryside and Backwoods home because I am one of those wannabe's. I'm 37 and I just feel too old to start. We live on an acre but I don't know how to garden, I can't even grow flowers. You talk about a green thumb, well I have a dead thumb. That's how bad it is. Maybe i'm feelling kind of down in the dumps. Doe's anyone live in north central texas? I do and it's hot!! Anything I plant dies from the heat I think. Oh well, gotta go.

Here is one I like: (and I don't know this C & P will format, so beware!). Also this site has some pretty good casserole recipes. I like to put them into individual casserole dishes and then freeze two so ya have another supper in the freezer, ready to go!

Recipe of the Day:

Holiday turkey lives yet again in our Tetrazzini made “Souper” quick and easy with Campbell’s Cream of Mushroom Soup.

Campbell's Souper Chicken Tetrazzini Prep/Cook Time: 45 minutes

1 can (10 3/4 oz.) Campbell's Cream of Mushroom or 98% Fat Free Cream of Mushroom Soup 1/2 cup milk 1 small onion, finely chopped 1/4 cup grated Parmesan cheese 1/4 cup sour cream 1 1/2 cups cubed cooked chicken or turkey 1 small zucchini, cut in half lengthwise and thinly sliced 1 1/2 cups hot, cooked very thin spaghetti

MIX soup, milk, onion, cheese and sour cream. Add chicken, zucchini and spaghetti. Toss to coat. Spoon into 1 1/2-qt. casserole. BAKE at 375°F. for 30 min. or until hot. Serve with additional cheese, if desired. Serves 4.

VARIATION: Substitute cooked fresh angel hair pasta for spaghetti. Garnish with sliced almonds.

Store sour cream in its carton in your refrigerator for up to 5 days from the last date of sale on the carton. For a variation, try your own choice of vegetables in this recipe, such as broccoli or green beans. Also, if ya want to grow green things, try your local cooperative extention service for a list of plants that grow well in your area. I live in the desert, but using xeriscaping, it can still be lush and colorful, without much work, or water!

Here's a good pasta casserole. Do you not want any casserole recipes that use hamburger? I have a good chili casserole that uses hamburger. Let me know.

CAVATINI

8 oz cooked and drained pasta (any shape) 1/2 cup chopped onion 1/2 cup chopped green or red pepper 1 small can sliced mushrooms (opt) 1/2 small package sliced pepperoni (cut slices into quarters or leave whole) 3/4 jar of spaghetti sauce 1 teaspoon salt 1 teaspoon oregano or italian seasoning 2 cups shredded mozzerella

Combine all ingredients except 3/4 cup cheese. Place in greased casserole and top with remaining cheese. Bake at 350 degrees for 30 - 40 minutes or until cheese melts and is bubbly.

vicki, one favorite around here is when I stick a pack of frozen hamburger in a baking dish, surround it with frozen green beans, and small whole potatoes scrubbed. Add a cup of water and salt and pepper. Cover. Bake for about 2 or 3 hours. When it exits the oven, I use my spatula to slice the hamburger up a little. Top with cheese if desired.

Another favorite is turkey burger crumbled (or any kind of meat, really- try chopped chicken) into boiling water, add peas and sliced carrots and pasta of some kind, enough to eventually absorb the water. When cooked, top with cheese sauce or mushroom soup and stir in.

One more? How about sausage potpie? I fry my Jimmy Dean sausage in my iron skillet. When browned, add water. Throw in a chopped potato, a chopped carrot, a chopped onion, some frozen peas or green beans, and perhaps a little corn if I have some leftover in the fridge. Simmer covered till done. While simmering, whisk together about 1/4 cup flour with 1/2 cup of milk. Stir into the cooked mixture. Stir well til thickened. Then comes the fun part. Use your favorite biscuit or pie crust dough, or use canned biscuits, and top the whole thing. Put your skillet into the oven at 425 and bake till golden on top. Serve straight out of the iron skillet. This is better in winter, but it helps get rid of the burger rut in summer too.

Here's the Chili Casserole recipe:

1 med onion chopped, 1 tbl butter, 1 lb hamburger, 1 can tomatoes with green chilies (16 oz?), 1 can chili beans in sauce, 1 can corn (15 oz?), 1/2 cup chopped black olives (or less), 1/4 cup cormeal, 2 tbl chili powder, 1 tsp salt, 1/2 tsp cumin, 1/4 tsp pepper, 1 cup grated cheddar

Brown onion in butter. Add meat and brown. Drain. Add remaining ingredients except cheese and mix. Put in casserole dish and top with cheese. Bake at 350 degrees for 40 - 50 minutes.
