I have a couple of recipes for rhubarb. One thing I make is upside down rhubarb cake. 3 cups rhubarb copped, 3 tlbs. butter, 1 cup sugar, mix these and put in bottom of glass baking dish. Then mix the batter, 1`cup sugar, 1 egg, 1tbls. baking powder, 2/3 cups milk, 1/2 cup butter, 1 1/2 cup flour. pour this all over the rhubarb. bake at 350 degrees for 40 minutes or unti lcake batter is done.strawberry rhubarb pie. make a double crust. In a bowl mix together 2 cups rhubarb and 2 cups strawberries and 1 1/2 cups of sugar. Then pour it into the bottom crust. Place on the top crust an bake as usual for any pie.
I also have a strawberry rhubarb jam recipe that I cannot locate right now but if you are interested I'll try to find it soon.

Wine. 8# chopped rhubarb, 1/2# chopped raisins, wine yeast, to 1 gal water. Ferment on pulp 3-5 days, transfer to 1 gal jug, add 2# sugar, ferment with airlock till clear. One of the finest wines available. For rose petal or dandelion wine, substitute the rhubarb with 1 gal flowers. Also both excellent.

Tart rhubarb jam:27 cups of rhubarb, 7 cups of sugar, 2 large boxes of raspberry jello and 1/4 cup of water.
Boil two cups of rhubarb and the water. When it becomes a soup, add more rhubarb. When the last of the rhubarb can be covered with soup, add the sugar and stir will. Turn off the heat, add the jello, put into jars, boiling water bath for ten minutes.
