Any good spinach recipes?

We have an abundant supply of spinach this year. Does anyone have good recipes?

Here's my family's favorite spinach recipe:

Spinach Beef Biscuit Casserole: 2 tubes refrigerated buttermilk biscuits (or homemade pizza dough) 1 1/2 pounds ground beef (or ground lamb) 1/2 cup chopped onion 2 eggs 2 cups fresh spinach chopped 1/2 cup chopped mushrooms 1/2 cup crumbled feta or shredded monterey jack cheese 1/4 cup grated parmesan cheese 1 1/2 teaspoons garlic powder salt & pepper to taste 1 to 2 tablespoons butter

press and flatten biscuits (or pizza dough) onto the bottom and up the sides of a greased 11x7x2 glass baking dish, set aside; brown meat and onion, drain grease; in a bowl beat eggs, add spinach and mushrooms, mix well, stir in the cheeses, garlic powder, salt, pepper and beef mixture, mix well; spoon into prepared crust, drizzle with butter; bake uncovered at 375 for 25 - 30 mins

We don't like the prepared biscuits, so I've used my homemade pizza dough recipe and had good luck, but you have to make sure it's pretty thick in the pan. I've also found that it takes a little longer to bake than the recipe calls for, more like 45 mins, but that may be my oven. It's also pretty good with black olives added.

I can't find the recipe this minute for exact measurements, but this one is pretty easy to "guesstimate".

Green Enchiladas

saute diced onions, grate cheddar cheese. mix these two ingredients together and roll up in lightly oiled corn tortillas.(oil keeps them from cracking)

in blender or processor mix together diced green chiles (canned), 1 can cream of mushroom soup, sour cream (not a lot) and spinach (fresh, lightly steamed or frozen, thawed)about 1 1/2 cups

pour the sauce over enchiladas in a glass baking dish.Make sure they're placed seam side down to prevent unrolling.

bake at 325 for about 20-25 min. or until cheese is melted and sauce is heated thoroughly.

Even my children eat these happily! Enjoy!

Hi.. the best cook I know called me just last night and gave me this: Saute some onion in a skillet, add torn spinach and a can of mushroom soup. Heat through till warm and spinach has wilted.

That's it! To be honest it doesn't sound good to me, but if "ANN" says it's good, then it is :)

I've recently been hooked on spinach-mushroom lasagna. It's basically the recipe out of Moosewood, but I added 10oz of chopped spinach and 1 cup sliced mushrooms. MMMMMmmm. If you need the whole recipe, I think I can remember it. Happy eating! dh in nm

Thanks for all the ideas. Maybe I can get my kids to eat spinach with one of these recipes. So far, "you'll have muscles like Popeye" hasn't worked!

Here is a great one which also makes two meals[ freeze half]

chicken soup with tiny meatballs

bring 8 cups chicken broth and 8 cups water to a boil[ large pot].add 16 ounces of bow tie noodles, cook 5 min then add 16 ounces of chopped spinach, simmer 5 min more. Mean while in a large bowel add 1 and 1/2 lbs ground beef, 1/2 cup parmesian cheese and 1 teaspoon minced garlic until blended. Form into small balls and add to soup. Cook until meat is done, add three cups cooked mixed veggies[ frozen works]cook a few more minutes then serve. Makes enough for 4 people for 2 dinners served with bread.
