looking for pickled jalapeno recipe

Last year I had a bumper crop of jalapeno peppers. This year I'm looking for some recipes for pickled jalapeno to put them up. Your help is appreciated.

Dilled Jalapenos

We usually use pint jars, but use the smaller ones for gifts.

Pack jar tightly with peppers. We vasilate between sliced about 1/4" thick and whole with fork holes poked all around. We also put in diced garilc and onion along with carrot slices and samll cauliflower florets. Top each jar with tespoon of canning salt and one small head of dill or one teaspoon of dried dill.

Boil: 3/4 cup vinegar, 1/4 cup water, 1-2 drops of olive oil. Pour boiling liquid ocer peppers to cover in jar, seal immediately while still boiling.

Adjust the amounts but keep the ratio of ingrediants for the size batch you are doing.

Best if you wait a couple of months before you try 'em... We also put in other hot peppers along with the jalapenos and they all work great!

Cut off tops of pepper...(rubber gloves suggested)...Soak peppers over night in salt water(maybe a 1/2c to a gallon)...5 to 1 ratio apple cider vinegar to water...several garlic cloves...boil 15 minutes...pour over peppers in jars...burp jars...process hot water bath 20 min qts. 15 mins. pts. This is how I can all my peppers, but I think I'll try the above recipe. I've won two grand champions and a first for the peppers, but they go by looks and not taste. I've had several people ask for the recipe and others keep coming back for more. Enjoy!
