Ice box cake : 1 box chocolate pudding , 1 box vanilla ,grahm crackers. Make pudding , get a bread pan and put a single layer of grams on the bottom and sides , put a layer of pudding ,grams , pudding until done .Refridgerate and enjoy.

Thanks, Cindy! Quick burritos: Brown 1 lb ground meat (I use ground turkey), add 2-3 cups leftover juicy beans, red chile powder to taste, cumin to taste, and heat till bubbly. Spoon into flour tortillas, and roll up. Quick enchiladas: Layer thick corn tortillas with red chile sauce, top with grated cheese and chopped onion, heat in 350 oven 20 min. Enjoy!!!

Tatertot casserole

1-1/2 pounds ground beef 1 large onion chopped 1 can crm mushroom soup 1 package tatertots (can substitute diced potatoes if desired) 2 c. shredded cheddar cheese

Brown beef and onions; pour soup into bottom of casserole; top with 1/2 of beef mixture, 1/2 tatertots and 1/2 cheese. Repeat layers ending with cheese. Bake at 350 for 1 hour. Tastes like a cheeseburger. Not exactly health food but my kids love it!

I saw this recipe on a package of fresh spinach at the produce counter and tried it. My husband even liked it and agreed it would also be good as a marinade for chicken or pork or as a dressing for fruit salad.

Honey Lemon Salad Dressing--3 T. olive oil, 3 T. fresh lemon juice, 2 T. honey, 1 clove minced garlic, fresh ground black or white pepper. Mix well. Pour over spinach, other salads, or just whatever your little heart desires. Refrigerate unused portion.

Freeze equal parts (or varying measurements based on taste and preference) of at least three berries (my fave are black berries, red- , and gold-raspberries, but others work well also. Mix evenly, set aside to just warm up. Meanwhile, back at the batcave, puree enough mulberries to provide a decent amount of sauce for berry mixture. Add a 1/4 cup of red or white wine of your choice, or a few TBSP of berry liquor of some incarnation per cup - cup and a half of puree. Warm sauce slowly in heavy pan, stirring frequently to prevent burning and to remove however much alchohol you don't want (we wild childs can just warm it through.) Dish semi-frozen berries into your best desert servers (individual compotes work especially well. Pour hot sauce over berries and serve. Oh yeah, baby. I like this kind of party!

My favorite Sunday quick lunch. Dinner in 5 minutes or less!

BEAN BURRITOS 1 can fat-free refried beans 1 cup picante sauce 1 cup shredded cheese

Stir together and heat until cheese is melted and bubbly. Spread a nice spoonful all over the top of a flour tortilla. Roll up like a jelly roll and enjoy. Also good with shredded lettuce, onion and tomato.
