Liver Recipes?

I have some pork and beef liver in the freezer I need to use any, good recipes out there that won't dry it out? Would like some bakeable or crockpot recipes if there are any to save time if possible. Thanks in advance.

Well, this isn't bakeable or crockpotable but it's delicious. Liver 'n Onions. Flour liver and brown preferably in cast iron skillet...add 1/2 inch of water or a little less...simmer...add lots of chopped onions...salt and pepper to taste...turn liver quite often...add water if cooks dry...when liver is done add flour to thicken...should be extrememly tender...serve with mashed potatoes...Enjoy!

You just tell your children they can come and live with me! I hated this stuff as a kid, and was forced to eat it! I never made my children eat it! Grind it up and hide it in meatloaf! Vicki

The liver and onions is great, my grandmother used bacon grease to fry it in and mixed in some cornmeal in the flour to bread it with. Yum!!!!!!!!!

I cook mine like Cindy..I had a friend that put tomato sauce in hers to cut the taste..(o.k. kill the taste LOL) I cannot stand hog liver but use a small amount of it cooked and ground in my scrapple.

As children, we used to go shopping with granny and she used to buy us dinner at the Newberry's cafeteria afterward. We three kids looked forward to this to no end. One day, I managed to stun the waitress by ordering liver and onions (I must have been all of 10- ish). She gave granny that look (will she eat this if I bring it or will it go to waste?). Granny just laughed and said that I loved the stuff and that I'd eat it quicker than a dog would. She was right, too. Used to just love that stuff. I'm a veggie now, but from time to time, I really miss liver and onions!

slice and cut liver into squares, dry as you would jerkey and use as treats for the dog.

My little puppy (not so little) will do anything for a liver treat! This has made training so much easier.

I seldom have liver now because we aren't raising a calf but when I did this is how I prepared it. And my 5 children loved it! Slice liver into pieces the size of your little finger and roll in wheat germ. Fry about 3-4 pieces of bacon and then fry the liver quicly in the bacon grease. The smell of frying bacon is in the air and many times what many people object to is the smell of liver being cooked. Sprinkle with salt and enjoy...kinda like french fries!

Here are our household favorites in order of preference, Cajun Fries (works with liver, heart, kidney, gizzards, ect,?) slice into long 1/4 inch wide 'sticks' season heavily with powdered garlic, onion,red& black pepper, salt to taste.[I like, Tony Chachere's creole seasoning the best, check the market, this is good stuff] then flour, then fry quickly, in very hot oil, or bacon grease I use the hot spatula as a swatter to keep the kids away til I am done cooking. Next, simmer the [what ever it is] in very heavily seasoned water until very tender or as tender as it will get, chop or mash to make a paste, mix with a little mayo, eat on crakers with a hotpepper slice on top. Next, Fried with onions, simple enough Next, pan fried, no onions, very quick, with rosemary spash of wine. Next, mixed in meat loaf, well seasoned. We don't often get passed the 1st one though.

Cynthia, My mom used to slice liver very thin and marinate it in a soy sauce based marinade, then stir fry it, and we ate it. Find a good recipe for a Chinese beef stir-fry that has a flavorful sauce, esp with garlic and ginger, and plenty of vegetables. Gosh, I haven't had this in years as DH refuses liver in any guise, but I might try it next time he's out of town on buis

Can't help much with recipes, other than the obvious, am just happy to know that I no longer have to feel I'm the only liver-lover out there. Can't beleive the looks I get when I order it in a restaurant. Chicken livers boiled to perfection are a little slice of heaven!!! I get the same reaction at home and away with beets, just can't figure it, guess all the more for me!?!?

I'm a long time liver lover. Probably comes from growing up poor. You eat what you can afford. I've heard recently though that it is not safe anymore to eat it because of all the "growth" stuff they put in the feed and because of the chemical residue on the food they eat. I've heard it all ends up in the liver of the animal. Does anyone out there know anything about this? What are your views? Most everyone around here feeds it to their dogs and I can get all I want free or close to free. But I don't want to harm myself and my family by eating something dangerous.
