Lynn suckered me into cooking tonite. She wanted beef roast and potatoes and veggies. I didn't feel like cooking anyway, so I brazed the roast in a 3 in deep skillet, dumped a pint of kernal corn and a pint of blackeyed peas in the skillet around the roast and layed a dozen baby potatoes on top, seasoned with a little Mrs. Dash, fresh garlic,onion and parsley. Put the cover on and stuck it in the oven for 1 hour. Tastes great and only 1 skillet and lid dirtied during cooking.

Hoot, How else do you eat mashed taters and peas? Something else I notice , the pea and corn juice tenderized the roast to where it cut with a butter knife.
