Blackberry Recipies

Howdy! We are going to be SWAMPED with blackberries the year! We've made cobbler, muffins and have jelly planned next. We're not big wime drinkers, so that's out, but anyone have any good recipies for ..........say....ice cream, juice, syrup, ect, ect? Post those recipies please! Thanks

Jason -- you can make coulis -- whizz the blackberries in the blender. If they're really sweet, don't add sugar -- if they could use a bit of sweetening, add sugar to taste & whizz again. Place in serving sized containers and throw in the freezer.

When you're ready to use it, let it thaw (COMPLETELY!!!!) in the fridge or on the counter. Add a drop of two (depending on how much you like, of course!) of your favorite liqueur -- amaretto would go nicely with blackberries, I would think -- or a bit of brandy. Mix it up really well, then pour a puddle on a dessert plate and top with plain cheesecake, vanilla ice cream, or fresh fruit and whipped cream.

Voila -- instant fancy-schmancy dessert for impressing bosses, neighbors or in-laws!

Jason, one of our favorites is to put blackberries in a kettle, sweeten to taste, add cornstarch & water to thicken, and add a bit of almond extract and cook over medium heat until sauce is thickened. Spoon this over ice cream (homemade of course) or pound cake.

Hi Jason, it must be the year of the bberry. We have lots to. I juice them through a Victorio Strainer and can it with a little sugar. Then the fun begins. We like to use it several ways. One is to make a half gallon of fresh lemonade and add a pint of bberry juice. Pour over crushed ice. Another is to put about a fourth of a cup in a glass, fill with crushed ice and pour ginger ale over it. My personal favorite is to make a pan of cat head biscuits and heat the sweetened juice and pour over a hot buttered biscuit. I thicken it with cornstarch and use it over angel food or pound cake. If you make it real thick with clear gel you can use it between the layers of a yellow cake frosted with whipped topping. I have to stop. I'm getting hungry for something black berry. I have no answers, Just questions. Can anyone tell me what to do with all the plump blackberries I have at my disposal? Recipies?
