Looking for a great fudge recipe

greenspun.com : LUSENET : Countryside : One Thread

Hi folks,

I'm looking for a recipe for vanilla or chocolate fudge that is made from scratch, not marshmallow fluff, and will help use up my surplus goat milk. (With the amount of milk I'm getting, I may be making a lot of fudge!) If anyone knows how to make the rich, creamy kind you can buy at candy shops, I'd really appreciate the recipe! Thanks very much.

By the way, thanks very much to everyone who answered my question about thin, salty milk. The problem seems to have solved itself. Maybe she was just in a bad mood about having her kids weaned and suddenly getting an EXTREMELY full udder to deal with. She seems to be over it at this point. Thanks again for all your input!

Hi,

Glad you finally got your milk taste situation resolved. Heres my favorite recipie for fudge. Its choc'peanutbutter but the peanut butter is optional. I also have a vanilla, but have not as yet tried it. Good Luck!

Vanilla: 3 cups sugar 1/2 cup butter or margarine 1/2 cup light corn syrup 1 tsp vanilla extract 1 and 1/2 cup goat milk 1/2 cup chopped nuts (opt) combine all ingedient, except for vanilla. In a large saucepan cook over medium heat til it boils, reduce heat and let boil til it reaches the soft ball stage, about 234-240 degrees on a thermoter. Stir frequently. Remove from heat, add vanilla, beat til thick by hand, pour into greased 8x8 pan.

Chocolate: 3 cups sugar 1 tsp vanilla extract 1 and 1/2 cup goat milk 1/4 cup peanut butter (opt) 2/3 cup baking cocoa 1 c walnuts (opt) 1/2 cup margarine or butter Place sugar and cocoa powder in pan, mix well and then add goat milk and butter. Bring to boil, reduce heat, boil gently til it reaches soft ball stage. Stir frequently. remove from heat after it reaches soft ball stage. Add vanilla and peanut butter and/or nuts. Stir by hand til thick, pour into greased 8x8 pan.. cool

Hope these help.
