I have a friend who has quit work to be at home and homeschool. She has time now to cook from scratch but a few things she still buys to help in a pinch. "Hamburger Helper" is one of them. I think I have heard of recipes to create these yourself. Does anyone know of any. I know they are basically just noodles and a sauce mix. I guess I just need a sauce mix recipe to give her.

This is a recipe I use sometimes when pinched for time. It uses boxed macaroni and cheese, which is A LOT cheaper than hamburger helper--I can get it 4 for $1 a lot of the time. And my kids love it. EASY MACARONI AND CHEESE CASSEROLE 1/2 lb. ground beef 2 1/2 c. hot water 1/2 tsp. salt 1/4 tsp. pepper 1/4 c. margarine 1/4 c. milk 1 pkg mac & cheese dinner Brown beef in skillet. Drain fat. Add hot water and macaroni from dinner, salt, and pepper. Bring to a boil. Cover and simmer 10 min. Stir in rest of ingredients.

You know, Kathy, it's so funny, Hamburger Helper sells a variation called "Cheeseburger Macaroni" or something similar....very cool. I'll try it soon.

Slice up some mushrooms and onions,fry with the hamburger,drain grease off, add a can of cream of mushroom soup, a little milk or water, and serve over cooked pasta ,rice, or potatoes. You can also make a white sauce and use that instead of buying the canned soup.

Hi Kathy,Nosing around for Y2K sites, I found WWW.JUSTPEACE.COM & went to the "Better Times" thing & found a cookbook/how-to thing with many segments - one had making your own mixes (the one for Bisquik-like stuff makes great muffins, etc), one for chicken dishes, one for tuna, etc. The whole thing was geared for do what you can, with what you have, where you are, which was one of their sayings. Lotsa neat stuff. They also have a Prepardeness Nuggets #1 - 18 that was filled with an astounding amount of real practical info & reminded me of something like a cross between an update on Carla Emory's book & the Foxfire books. Loved it. Printed out all of it. Actually have used lots of it. Their whole idea is how to live better with what you have, etc.
Oops, didn't mean to write a novel...and please don't think I'm promoting a religious site, they just had lotsa good info. Cute little story about Y2K & after, too. You friend could find lotsa neat stuff there...Kt.

Katie, thank you so much for posting that site. It sounds exactly like what I've been searching for. If you find anymore gems like that please post. I've collected some dry seasoning recipes and mixes just here and there. Too hot to can in Arizona. Thanks again.
