My wife uses a Power PC (Power Computing Power Tower Pro) which has SCSI connections for her peripherals. It's time for a new scanner but most of those we are considering (particularly the ScanMaker 5 or Epson 1600) use a SCSI-2 connection.

Are cards available to add SCSI-2 capabilities to our computer or will those scanners work with our regular SCSI interface?

If I'm not mistaken the pecking order on SCSI goes like this: ULTRA-SCSI is a 50 pin plug and will accomodate your old SCSI as well as the ULTRAs, ULTRA WIDE SCSI which is a 68 pin plug and the ULTR-2 SCSI which is also 68 pin but not compatible with the WIDE SCSI. If you have a PCI slot available you can get a ULTR-2 card (which is what I think you are referring to) in the $235 range (ouch). That's the nice part about new computers - all three are built into the motherboard. A place you could start your search is Dirt Cheap Drives (800) 786-1173. I've bought from them before and been content with their service. They've been around a long time. They have a web site at www.dirtcheapdrives.com but I didn't find it easy trying to find prices on their controller cards (which I know they sell).
