Gluten

On one of these threads someone referred to CS telling how to make gluten. I have looked through the last year's copies and can't find it anywhere. I can't even find the original reference. Can anyone help me out?

Basic gluten [ from the farm vegetarian cookbook]8 cups wheat flour,2 cups water[enough to make kneadable dough]mix and knead above together fo 20 to 30 minutes until you have a very smoth dough with no cracks in it.It should bounce back when you punch it.put in bowl cover completly with cold water.let soak under water 1 to 2 hours. Then begin kneading under water, kneading out all starch and being carefull to hold gluten together.changethe water when it gets milky from starch, keep changing until water stays almost clear.This should make 1 to 2 cups raw gluten which can be spiced, oiled and cooked
