I recently read an article on long-term storage of fresh eggs, (or perhaps it was embedded in a reader's comments?) but cannot find it again to use. It used a powdered substance mixed with water to make a dense liquid stored in a crock and whole eggs fresh were added for keeping. Can anyone reference this artcile or identify the "powder" substance for this process?

I believe the solution or substance your are looking for is called Sodium Silicate. I have heard that WalMart will order it for you and it is a lot less expensive.I also have found info on storing eggs for up to a year with using Mineral Oil coating.

You may be referring to "water glass" as it is used to store eggs. You mix it up and rub it on the eggs. My local True Value hardware store sells it. Happy Hovel also sells a perservative of some sort for eggs, but when I checked the water glass was much less expensive.

I always thought that sodium silicate and water glass were the same thing...are they not??? I am loaded with eggs now too, and was thinking of trying water glass ( or sodium silicate) I do have a true value hardware here to check to see if they have it. Thanks!!!

I have heard of the waterglassing solution soaking through the shell and affecting the quality of the eggs. Whenever I have a huge surplus of eggs, I make pasta, and dry it. A hand crank machine is fairly inexpensive, and a folding wooden clothes rack works great as a drying rack. Store it in glass jars. Easy recipe, 3 eggs, 2 cups flour. If you need any details, just ask.
