I run S-Mart version 1.8.7 and use shipping method #4 to calculate shipping prices on the item cost. I have 3 shipping methods to choose from.

When I get the order e-mailed to me, it shows the shipping price just fine. But I need to have the type of shipping also. Like if my customer has chosen method #3 (2 day express), I need it to e-mail me the shipping price AND "2 day express".

Is this possible to do?

It is not a builtin option, you'd have to custom program it. Should be a fairly simple modification.
